ONE DISH FRESH ITALIAN




This is a easy health dish you throw it all in the pot, INCLUDING the uncooked Pasta, and cook! - Bring it to a boil, then reduce to a simmer. The starch from the pasta makes a thick sauce. The other ingredients cook right along with the pasta
Ingredients

8 ounces spaghetti, angel hair, or linguine pasta 
1 can (8 ounces) diced tomatoes with liquid 
1/2 cup diced chives OR onion
1 teaspoon minced garlic ~I used the jar type
1/2 teaspoon Italian seasoning
2 teaspoons chicken or vegetable bouillon
1 can condensed tomaTo soup
2 1/2 cups water
2 tablespoons extra virgin olive oil
Parmesan cheese for garnish

Directions

Place pasta, tomatoes,onion /chives , garlic, Italian seasoning, in a large stock pot. Pour in water, tomato soup, and bouillon.Drizzle top with oil.

Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated .

Stir pasta several times to distribute the liquid in the bottom of the pot. Serve garnished with Parmesan cheese.


This dish is great as a vegetarian, or fry up some Italian sausage for a more hearty version.
