BACON BOURBON JELLY

"I don't think your ready for this jelly!"


BACON ~BOURBON JELLY
It’s a simple easy recipe to make and you will get a ton of enjoyment from the ohs and ahs you will receive.

INGREDIENTS:

2 pounds  bacon, cut  into 1-inch pieces 
1 LARGE onion, diced (about 2 cups) 
3 cloves garlic, peel and chopped (About 2 teaspoons) 
1/4 cup cider vinegar 
1/2 cup packed dark brown sugar 

3 tablespoons ground chocolate
1/4 cup Honey or maple syrup 
1/4 cup brewed coffee 
6 tablespoons bourbon

1 tablespoon of whole grain mustard 
Black pepper to taste


DIRECTIONS:
 Cook bacon until is lightly browned and starting to crisp, about 20 minutes.Drain well on paper towels. Add onions and garlic and cook, until onions are softened and translucent, about five minutes. Add vinegar, brown sugar, maple syrup, coffee, and bourbon. Bring to a boil and cook for two minutes.
Transfer mixture to a crock pot and cook on high, uncovered, until liquid has reduced and thickened slightly and bacon is a dark brown, 3 1/2 to 4 hours.
Transfer mixture to food processor and pulse until coarsely chopped. Transfer to  sterile warm jelly jars. Process in a pressure canner for 90 minutes at 11 PSI.




      Try it on  ice cream ,toast, in place of mayonnaise in a


                              sandwich, a grilled cheese , 


                                  or even on pancakes.
